For 365 days, the culinary team focused on ingredient integrity and precision in execution, from bright, citrus-forward ceviches and open flame anticuchos to signature mains. Service was shaped to feel calm and attentive so each guest experience flowed with a considered rhythm from arrival to the final course. Live performers, resident DJs, and a lifestyle driven program invited guests to “find their inner Inca” in Muscat, reinforcing the restaurant’s status among the city’s top dining destinations.

Behind the scenes, the culinary team introduced9seasonal dishes, invested 100+ hoursin skills development, and established80% morelocal supplier relationships so seasonality and consistency are felt on the plate. House classics were refined and measured updates were introduced through the year, guided by clean technique and respect for Latin American foundations. Since opening, the restaurant has welcomed more than50,000 diners.The first year also earned a nomination for Middle East’s Best New Restaurant at the World Culinary Awards and inclusion on BBC Good Food Middle East’s 2025 nominee slate for the Americas and Caribbean category.
